Bistronomy at Vydrica Receives Prestigious Gault Millau Award and Introduces New Tasting Menu

The first retail tenant of the exclusive Vydrica project in Bratislava’s castle district has impressed major gastronomic critics just six months after it opened at its new location. Bistronomy restaurant on Floriánska Street has been ranked among the top 10 best restaurants in the Bratislava region and has prepared a completely new tasting menu for its guests.

Vydrica has its first major success. Bistronomy restaurant, which was the first to bring life to this attractive project in Bratislava’s castle district, has received a prestigious rating from the world’s second most respected gastronomic guide – Gault&Millau. Two chef’s hats and a place in the top 10 Bratislava restaurants is not just recognition of our hard work, but also confirmation that Vydrica is becoming a place where great things happen.

“I believe the arrival of G&M is a big deal for Slovak gastronomy, so both myself and the entire team were delighted that we have been listed in this prestigious guide. It’s vindication for the work we’ve done and motivation to keep improving,” said head chef Jakub Röder, who builds his culinary expertise on quality, seasonality, and local ingredients from Slovak farmers and domestic artisanal producers.

Our name, inspired by the French word “bistronomique”, describes a more refined, elevated style of gastronomy in a relaxed setting. This approach caught the attention of Gault&Millau critics: “Head chef Jakub Röder gives the greatest care to selecting ingredients, based on quality and seasonality, from local farmers, cheesemakers, fishermen, and other producers. In this regard, we see Bistronomy as one of the best establishments in Slovakia. For anyone who cares about food quality and origin, visiting this place will be a great experience.”

The restaurant has introduced a completely new 7-course tasting menu with optional wine or non-alcoholic pairings. Head chef Jakub Röder explains the philosophy behind this step:

“Reducing our evening offering to a 7-course tasting menu was a crucial decision for us. We want to provide our guests with an ever better experience when visiting Bistronomy and to this end we select ingredients with the very greatest care. That’s why we decided to serve this tasting menu, which reflects the current season and features various types of our preserved and fermented foods paired with excellent wines from sommelier Matej Demčák, and now also available with a non-alcoholic pairing.”

Dinner includes 3 snacks, followed by homemade bread with butter, small appetizers, two main courses, dessert, and finally petit fours – 3 small confectionaries.
