Vydrica is about to welcome a place where Bratislava will be present in every bite. The family-run bistro Bratislava Burger, which has made a name for itself in Petržalka and Rača over the past few years, is set to expand to one of the most prestigious neighbourhoods below Bratislava Castle at the beginning of next year.City-inspired burgers, a strong sense of local pride and a focus on high-quality ingredients will gain an entirely new dimension here. Vydrica will soon have its very own exclusive burger – naturally, a premium special.
Behind Bratislava Burger are Petra and Martin Jakeš, a married couple who are both native Bratislavans and passionate local patriots. They met while working as taxi drivers, and just as they fell in love with night-time drives through the city, they also fell in love with a shared dream of building a business around something they both truly enjoy.
“We didn’t think about where we would get a job, but about what we could do for ourselves – something we could fully commit to, with both our heads and our hearts,” Petra recalled.
All the dishes are a tribute to Bratislava – from the Petržalka burger and the vegetarian Miletička, to the Slavín special, the Devín tortilla and the spicy Ružinov burger. “We’re native Bratislavans – a bit of an endangered species,” said Petra. “That’s why we wanted our food to be deeply connected to the city we live in.”
Their story began with a dream of running a food truck. Over time, however, the idea of a gastro “trailer” evolved into a search for a permanent location – and in 2021 they found their first space in Petržalka. They opened in September 2022, with Martin spending six days a week there, twelve hours a day. Alongside raising two children, they managed to launch a second location in Rača and today lead a team of more than ten people.
Petra takes care of the “theory” – figuring out how to turn their ideas into reality and handling everything that comes with it, from admin to partnerships. Martin, meanwhile, focuses on the kitchen, practical solutions and processes. What unites them is a shared desire to create new combinations and play with flavours. “We wanted to do things differently. It wasn’t about inventing something entirely new, but about doing it well and in a way that truly felt right to us,” Petra said.

At Bratislava Burger, exceptional care is taken when it comes to ingredients. The foundation is aged Irish chuck roll – beef from cattle that spend the entire year grazing on lush green pastures. “What cattle are fed makes a real difference. We season the meat as little as possible, so the flavour stays fresh and pure,” Petra explained.
Their buttery brioche buns are from a local bakery and are created to absorb the juiciness of the meat and sauces while remaining light. The burgers feature tasty vine tomatoes, crispy bacon, high quality cheeses and sauces prepared with care. A proper side dish is part of the experience too – fries and onion rings are included. “We are all about quality, freshness and fresh flavours and we don’t compromise,” she added.
Petra has had a personal connection to the Castle district since childhood – she grew up on the other side of the hill in Červený kríž, and her grandmother lived on Krátka Street. “It’s my childhood. We used to go up to the castle to collect chestnuts, and I always felt the whole area was the heart of Bratislava,” she recalled.
When the opportunity arose to bring Bratislava Burger to Vydrica, they didn’t hesitate. “I used to dream of living in Vydrica. Now we’re turning what we longed for into reality. The combination of Vydrica’s exclusive location and our carefully curated burger concept with a touch of Bratislava feels like love at first sight,” Petra said about the motivation behind opening in Vydrica.
What fascinates her about the project is not only its location between the Danube and the Old Town, but also the close attention to detail. “I’ve never before encountered such a professional approach from a developer. It’s a premium yet intimate location that truly makes sense to invest in.” The new Vydrica is designed as a vibrant urban district, bringing together residential living, offices, culture and high-quality gastronomy under one roof.
Just as Miletička, Jarovce and Devín each have their own distinct flavour, Vydrica will get its very own exclusive burger – a premium special inspired by the district itself. The name and final combination of ingredients remain under wraps for now, but one thing is certain: it won’t be a random mix. “We never pull names out of thin air. We always look for a connection to the neighbourhood, its streets and its stories. Everything we do is inspired by Bratislava,” Petra explained.
In the past, they have created burgers such as Gaštanová aleja with chestnut mayonnaise, the Červený kríž special featuring a red bun and black aioli, and the Revín bowl with pulled beef, named after a lesser-known part of the city. According to Petra, Vydrica calls for a truly premium combination – what exactly it will be remains a carefully guarded secret.

In Vydrica, they plan to offer the very best of what people already love – burgers, bowls and tortillas – to be complemented by draught Pilsner Urquell and other gastronomic surprises. Personal contact and an individual approach are key: the couple enjoy talking to their guests and often tailor the offer to their preferences. “We’re not cheap, but we will never compromise on quality. For us, a burger is a reward – when someone craves an exceptional burger, we want them to think of us,” Petra said.
“Our wish is for Bratislava Burger in Vydrica to become a place where food lovers come for great food and a pleasant atmosphere. We want to present Bratislava through flavours. Our burgers are also sought after by international tourists, but our regular guests must always leave just as satisfied,” Petra Jakeš concluded.
